Magic Sauce was just the beginning… As a full-time working mother who still wants to offer her family home-cooked meals, good organization is essential. I absolutely love to cook, no question! But when I cook, things often need to be quick, especially in the evenings after work. To make this work smoothly during the week, I've picked up a few tricks over the years. I've perfected these over time. One of them is Magic Sauce .

I don't even need to introduce Magic Sauce here. Anyone who follows my blog knows it. It comes in many varieties. I've already posted three of them ( The Origin , Reloaded , and Spicy ) here on the blog and use them in most of my dishes. But Magic Sauce isn't the only trick in my bag of tricks.

First up today is my Chez Fadi's garlic and onion paste .

Onions and garlic are needed in almost every dish. With this mixture, you always have something on hand for cooking. The time you would otherwise waste peeling and possibly finely chopping or grinding onions and garlic is eliminated. This time can be used to prepare other things. Once prepared, this paste keeps well in the refrigerator for several weeks. However, it is essential to use a clean spoon each time you scoop it out and to seal the container tightly afterward.

You don't need much for this, just garlic, white onions, lemon juice, and cooking oil. Preparation is (almost) child's play. The most time-consuming part is peeling the garlic. After that, everything goes quickly. Put the peeled garlic cloves and the onions into a blender with the cooking oil and blend until you have a smooth/coarse paste (depending on your preference). Then, add a few drops of oil and lemon juice to a clean glass jar. Pour the blended paste into the jar. Drizzle on a little more oil and a few more drops of lemon juice, seal it tightly, and voilà!

If desired, the paste can be boiled for about 10-15 minutes beforehand and salt added. Then let it cool briefly before putting it into the jars.

This way you'll always have a delicious paste to season or marinate your food. The paste also makes a great gift.
