I thought that if I'm going to explain the different spices I use for Chez Fadi's sauces, then the award-winning Penja pepper simply had to be included.
What makes this pepper so special?
This pepper, native Cameroon Moungo around the town of Penja . Hence its name, Penja pepper Poivre de Penja in French . Since 2013, it has been the first pepper from Africa to receive a PGI (Protected Geographical Indication), and only the second worldwide after Kampot pepper .
The Protected Geographical Indication (PGI, French: Indication géographique protégée (IGP) ) serves to distinguish traditional and typical specialties of a clearly defined region. To date, there are only three pepper varieties worldwide with IGP certification: Kampot IGP pepper , Penja IGP pepper , and Sarawak IGP pepper .
Penja pepper is known by other names such as bird pepper, hidden pepper, or Cameroonian treasure , and is available in various stages of ripeness, namely as black, red, or white pepper. White pepper is the most well-known.
Its flavor is described as stronger, woodier, with a hint of mint.
The town of Penja is a municipality not far from Loum , my hometown. It belongs to the Littoral . The Mungo region is widely known for its fertile, volcanic soils and optimal climatic conditions . These particularly favorable factors are ideal for growing crops such as bananas, cocoa, coffee, pineapples, and more. These soils also give Penja pepper its distinctive flavor. It is no wonder that Penja pepper is considered one of the best peppers in the world , and I have been especially proud of this since my childhood, which I spent in the Mungo region.
This rare, high-quality pepper lends a very special flavor to red and white meat, as well as fish and seafood, vegetables, and even soups. Black pepper is stronger and pairs perfectly with red meat, while white pepper is ideal for white meat such as poultry and fish. Red pepper is less common but goes exceptionally well with steaks.
Therefore, only Penja pepper in my dishes, and especially in all my Chez Fadi's sauces . You can simply taste the difference!
Health benefits
Most spices also offer numerous health benefits. Pepper is no exception to this rule.
Pepper possesses antibacterial properties and is used to treat cancerous ulcers, minor mouth wounds, and even sore throats. It is also helpful for digestive problems. Furthermore, it has anti-inflammatory effects and is often used to alleviate symptoms and pain associated with rheumatism.
Consuming pepper is therefore very beneficial to health and enhances the effects of other ingredients on the body. It is highly recommended.
