Poulet Yassa is a specialty from Senegal and Gambia

It is a spicy, hot sauce whose main ingredients, besides chicken, are onions, mustard and lemon juice.

As usual, I enjoy experimenting in the kitchen and tried some of Yassa's recipes, opting for the version without lemon juice. I'm sharing this one with you today

Chicken Yassa chez Fadi style

Poulet Yassa is a spicy, hot sauce whose main ingredients, besides chicken (Poulet), consist of onions, mustard and lemon juice.

Ingredients

  • 6 chicken thighs
  • 2 tbsp mustard
  • 2 large onion
  • 3 tablespoons of cooking oil
  • 1 tsp onion powder
  • 1 tsp paprika powder
  • 1 tsp curry
  • 1 tsp lovage
  • 1 tsp Magic Sauce
  • 1 large tomato
  • 1 fresh chili pepper/Habanero/Scotch Bonnet
  • frying oil
  • 3 tablespoons vinegar
  • 200 ml water
  • Salt

Instructions 

  • Wash the chicken and let it soak for about 10 minutes in 3 tablespoons of vinegar and about 1 liter of water, then rinse well
  • Then cut the chicken thighs into 2-3 pieces and make incisions in the meat

  • Place everything in a pot with cooking oil, salt, onion powder, paprika powder, curry, magic sauce , mustard and lovage, mix well, add chili pepper and let it steep, covered, for at least 30 minutes.

  • Add water, mix well, bring to a boil and simmer for about 5 minutes
  • Then remove the pieces of meat from the pot and reserve the jus for later
  • Heat frying oil in a pan and fry the chicken pieces until golden brown on both sides, remove and set aside for later

  • Heat cooking oil in another pan, then add salt and julienned onions and sauté

  • Add the diced tomato and lovage and sauté for about 5 minutes
  • Then add the onion and tomato mixture to the pot with the jus and stir well.
  • Then add the fried chicken pieces, stir well, cover, and simmer for another 5 minutes. Season to taste and it's ready!

Notes

Serve with cooked rice
