Happy New Year 2021!

Every year we say goodbye to the new year with a big party and a bang.

Unfortunately, this time it wasn't quite the case due to the ongoing sanitary crisis. 

However, we continued one tradition from previous years: our annual Fondue Chinoise.

To liven up the menu a bit this year, I decided against the classic salad. I wanted to make a more sophisticated but easy-to-prepare appetizer. So, I opted for quail egg skewers and salmon and avocado domes with a quail egg filling .

It was my first time and my family really enjoyed it.

I'm happy to share the recipe with you, complete with step-by-step pictures.

The ingredients


Quail egg skewers

  • Hard-boiled quail eggs
  • Pickles 
  • Chicken salami
  • Mustard
  • Party skewers

Salmon and avocado dome

  • 1 avocado
  • Smoked salmon
  • hard-boiled quail eggs
  • Lemon juice
  • 2-3 slices of toast
  • pepper
  • A little red onion
  • Salt

The preparation


For the Quail egg skewers

Slice the cucumbers and salami, and split the eggs in half
New Year's Eve
Layer as desired, adding a drop of mustard between each layer

Skewer everything together

For the Avocado Dome

Peel the avocado and place it in a bowl . Season with salt, pepper, and a few drops of lemon juice.

Mash with a fork and add onions
New Year's Eve
Mix everything well

Cut small circles from the toast using a glass

Cover a muffin tin with cling film and place the salmon slices inside.

Fill with the avocado cream and place a quail egg in the center.




Seal with the toast

Carefully remove the foil and the mold


Arrange everything on a platter covered with lettuce leaves, and decorate with pomegranate, fresh basil leaves and lemon slices.
