Cameroonian and West African cuisine reinterpreted

No Cameroonian dish is complete without allspice. West African dishes are mostly very spicy.

To make the food edible and tasty for everyone, there's pimento, also called piment purée or pimento sauce. In some countries, it's also known as piri piri or shito . This is a very spicy and very hot sauce made from chili peppers, Scotch bonnet or habanero, which is served separately from the food. This allows everyone to season their food according to their own preference for spiciness, much like using salt and pepper shakers to add extra spice to their food.

I always keep a small tin of allspice sauce in the refrigerator and some in the freezer. That way, I can spice up my food anytime.

We Cameroonians love to eat our Pimento sauce with grilled fish or meat. That's why it's a must-have for me during grilling season.

Ingredients


Approx. 5 red chilies,
1 small onion,
5 cloves of garlic
, 10 Djangsang (Akpi nuts),
3 Quatre côtés
, 2 Bêpê
, 2 Rondelles
, 1 finger of ginger,
1 tbsp pepper (black and white)
, 1/2 tsp coriander,
100 ml cooking oil,
1 tbsp salt

Clean all ingredients, roughly chop them, and place them in a blender. Blend everything into a smooth paste.

Sauce piment - hot chili sauce

Prep time 10 minutes
Total 10 minutes

Ingredients

  • 5  red Habanero or Scotch Bonnet
  • 1 small onion
  • 5 garlic cloves
  • 10 Djangsang ((Akpi nuts) )
  • 3 Quatre côtés piece 
  • 2 Bêpê
  • 1 Rondelles 
  • 1  Finger ginger 
  • 1 tbsp pepper (black and white)
  • 1/2 tsp coriander
  • approx. 100 ml cooking oil
  • approx. 1 tbsp salt

Instructions 

  • Clean all ingredients
  • Then put it in a blender and blend everything into a smooth paste

Notes

If desired, the sauce can be boiled for about 10 minutes. I prefer it raw. 
The sauce will keep for about a week in the refrigerator. It will keep longer in the freezer.
It's the perfect finishing touch to any dish.
