Cameroonian and West African cuisine reinterpreted
Spread the love of cooking

I've already posted quite a bit about Suya here. Today I'm sharing another variation of Kankan/Suyamix with you.

As you know, the main ingredient in kankan is roasted peanuts. If, like me, you've developed a peanut allergy over the course of your life (a real nuisance for a West African!), you don't have to miss out on suya. Here's an alternative to the original kankan that tastes (almost) just as delicious.

Ingredients:

  • 4 tbsp roasted cashew nuts
  • 1 tsp cayenne pepper (or more for those who like it spicy)
  • 1 tsp paprika powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp ginger powder
  • 1 tsp salt

Preparation:

  • Place all ingredients in a mortar or a dry mixer/coffee grinder and grind into a powder.

The spice mix is not only wonderful as a marinade for meat, but also for spicing up sauces and other dishes.

Bon appetite!

My tip for you:

You can make a larger quantity of the spice mix, freeze it in small portions, and always have it on hand.
