Cameroonian and West African cuisine reinterpreted

Today we're having Topsi Banana again – banana stew (yes, I said bananas, not plantains). This time with peanut butter/roasted peanuts and a veggie burger.

I've already published a post about Topsi Banana . Back then it was a version with cooked peanuts and smoked chicken.

This time the recipe is a vegetarian version with roasted instead of pre-cooked peanuts. The story behind it is pretty much the same. The preparation is also quite similar.

Both dishes can be prepared as vegetarians or with meat and/or fish. Both recipes taste absolutely delicious. My favorite, however, is the version with cooked peanuts.

You should definitely try both versions, following the motto "Form your own opinion".

Ingredients


5 green unripe bananas,
100g peanut butter,
approx. 100ml cooking oil,
2 onions
, 1 tsp garlic paste or 4 garlic cloves,
approx. 200g tomatoes
, 3 tbsp Magic Sauce,
salt,
approx. 1l water

Finely chop the onions and tomatoes and sauté them in a pot with hot oil and salt for about 5 minutes. The tomatoes should reduce in volume and begin to stick to the bottom of the pot.

Add the garlic and sauté for another 2 minutes, stirring constantly, until the garlic aroma is well developed.

Now it's time to add the previously peeled bananas, each cut into 3 pieces. Mix everything well and simmer, covered, over medium heat for about 2 minutes.

Meanwhile, mix the peanut butter with some hot water until the butter and water become a homogeneous paste.

Now add the mixture to the bananas, stir well until everything is thoroughly mixed.

Cover with water, add Magic Sauce, stir well again, cover, and cook for about 30 minutes, or until the bananas are soft. Season to taste and it's ready.

Topsi Banana with peanut butter

Prep time 15 minutes
Cook time 40 minutes
Total 55 minutes
Servings 4

Ingredients

  • 5 Green unripe bananas
  • 100g peanut butter
  • 2 onions
  • 4 cloves of garlic (or 1 tsp garlic paste)
  • 200g fresh tomatoes
  • 3 tbsp Magic Sauce
  • approx. 1 liter of water
  • Salt

Instructions 

  • Finely chop the onions and tomatoes and sauté them in a pot with hot oil and salt for about 5 minutes
  • Add the garlic and sauté for another 2 minutes, stirring constantly
  • Now add the previously peeled bananas, each cut into 3 pieces
  • Mix everything well and simmer, covered, over medium heat for about 2 minutes
  • Meanwhile, mix the peanut butter with some hot water until the butter and water form a homogeneous paste
  • Add the mixture to the bananas, stir well until everything is thoroughly combined
  • Cover with water, add Magic Sauce, stir well again
  • Cover and cook for about 45 minutes, until the bananas are soft. Season to taste and it's ready.
