We all love salads, don't we? At least that's the case for me. I eat salad at least five times a week. If I'm invited to a party with a buffet, I fill up on salad first and often forget about the main courses that follow.
Especially now during the holy month of Ramadan , people often tend to eat little salad/raw food, as some don't tolerate raw food well in the evening. However, you don't have to completely forgo salad just because you're only allowed to eat it in the morning and evening.
Often, people think only of raw vegetables when they talk about salads. But salads can be so much more than just raw vegetables and green leaves. You can create salads from practically any food. A few examples are potato salad, tuna salad, tabbouleh salad, attiéké salad, and of course, pasta salad.
After my post about Attiéké salad , which by the way attracted a lot of attention, I thought my blog could definitely use a few more salad recipes.

Today we're making an Asian noodle salad with selected "typical" Asian ingredients such as rice noodles, soy sauce, sesame oil, broccoli, and a touch of Thai curry paste. Just the list of ingredients is enough to make your mouth water.
This salad is easy to prepare, delicious, and very easy to digest, especially for those who don't tolerate raw salads well. It's a great alternative during the fasting month of Ramadan , so you don't have to go without salads. I highly recommend it.

Asian noodle salad with broccoli
Ingredients
- 250g rice ribbon noodles
- 300g fresh broccoli
- 1 red bell pepper/pointed pepper
- 1 spring onion
- 1/2 lime
- 4 tbsp soy sauce
- 3 tablespoons sesame oil
- Salt
- 1/2 tsp Green Curry Paste
Instructions
- Cut the broccoli into florets, wash briefly with warm water, place in a pot, pour boiling water over them, add salt and cook for about 2 minutes
- Quickly remove from the heat, pour over a sieve, rinse with very cold water, and leave to stand in cold water with a few ice cubes for about 3 minutes to stop the cooking process.
- Then drain the water and place the broccoli florets in a sieve to drain
- Meanwhile, place the noodles in a bowl, pour boiling water over them, let them stand for 10 minutes, then rinse them with cold water and drain them in a sieve
- Now cut the bell pepper and spring onions into thin strips and set aside.
- Place the drained and cooled noodles in a large bowl, add some of the soy sauce, sesame oil, and lime juice, and mix well
- Now add the broccoli, bell peppers, spring onions and the rest of the soy sauce and mix well again
- Leave to steep for about an hour and enjoy
