Did you know?

Chicken curry is a dish originating in Southeast Asia and the Caribbean. A typical chicken curry consists of chicken simmered in an onion and tomato sauce, seasoned with ginger, garlic, chili peppers, and a variety of other spices such as turmeric, cumin, coriander, cinnamon, and cardamom.

Nowadays, many supermarkets offer a wide variety of spice mixes for preparing chicken curry.

I often cook chicken curry because the wide variety of spices in this dish is very similar to that of West African cuisine. I've tried several variations so far, and it tastes different every time, and always absolutely delicious!

Ingredients


500g chicken breast,
approx. 200g broccoli
, 1 red bell pepper,
1 yellow bell pepper, 1 onion
finger of ginger
, 6 cloves of
garlic, 3 cardamom
pods, 100ml cooking oil
, 30ml soy sauce,
2 tbsp Thai red curry powder
, 1 tbsp curry masala spice mix,
6 curry leaves,
1 tbsp curry powder
, 1 tbsp paprika powder,
salt
, 1/2 tsp pepper,
1 tbsp potato starch (mixed with approx. 50ml)
, a little water as needed
, cherry tomatoes and green chili for garnish (optional)

Chicken Curry chez Fadi Art

Chicken curry is a dish that originated in Southeast Asia and the Caribbean.

Ingredients

  • 500g chicken breast
  • 200g broccoli
  • 1 One red and one yellow bell pepper each
  • Onion
  • 1 Finger ginger
  • 6 garlic cloves
  • 3 piece of cardamom
  • 100 ml cooking oil
  • 30 ml soy sauce
  • 2 tbsp Thai Red Curry
  • 1 tbsp curry masala spice mix
  • 6 Curry leaves
  • 1 tbsp curry powder
  • ! tbsp paprika powder
  • ! 1 tbsp potato flour (mix with approx. 50ml)
  • salt and pepper
  • A little water if needed
  • Cherry tomatoes and green chili for garnish (optional)

Instructions 

  • Cut chicken breast into strips
  • Cut the broccoli into bite-sized pieces
  • Cut the bell peppers and onions into smaller pieces as well
  • Cut cherry tomatoes in half 
  • Coarsely grind ginger, garlic and cardamom in a mortar or cut them into very fine pieces
  • Heat cooking oil in a pot
  • Add the chicken strips with salt, pepper, curry powder, paprika powder and stir well
  • Fry for about 10 minutes until golden brown, stirring constantly
  • Add the curry masala spice mix and fry for about 2 minutes, stirring constantly
  • Then add the soy sauce and onions, stir and fry for about 2 minutes
  • Add bell peppers, Thai red curry powder and curry leaves, stir well and simmer covered for about 5 minutes over medium heat
  • Add the broccoli, ginger-garlic-cardamom mixture and mix well
  • Dissolve the potato flour in a little water and add it, mix well and simmer covered for about 2 minutes
