Cut chicken breast into strips
Cut the broccoli into bite-sized pieces
Cut the bell peppers and onions into smaller pieces as well
Cut cherry tomatoes in half
Coarsely grind ginger, garlic and cardamom in a mortar or cut them into very fine pieces
Heat cooking oil in a pot
Add the chicken strips with salt, pepper, curry powder, paprika powder and stir well
Fry for about 10 minutes until golden brown, stirring constantly
Add the curry masala spice mix and fry for about 2 minutes, stirring constantly
Then add the soy sauce and onions, stir and fry for about 2 minutes
Add bell peppers, Thai red curry powder and curry leaves, stir well and simmer covered for about 5 minutes over medium heat
Add the broccoli, ginger-garlic-cardamom mixture and mix well
Dissolve the potato flour in a little water and add it, mix well and simmer covered for about 2 minutes
