Plantains are a brilliant invention of nature. I always keep some plantains at home. You can whip up something quick and easy with them.
Whether with fish, meat, eggs, vegetables, or something else. Fried, it's a great and healthier alternative to fries. Steamed, it's a substitute for potatoes, rice, and the like. Mashed or grilled, and so on and so forth…
Combined with sea bass, my favorite fish, it's a real treat. It takes me right back to my childhood. Back then, we often had grilled sea bass with grilled or fried plantains, bobolo, or miondo ( cassava ) at home on Saturday evenings.
In today's recipe, everything is deep-fried. A super simple and quick dish that's ready in no time.

Ingredients
Sea bass,
plantains,
salt
, frying oil

Clean the sea bass and cut it into 2 to 3 pieces, salt it well and all over, and let it stand for a few minutes.

Peel the plantains and cut them lengthwise into slices about 3mm thick.

Pour frying oil into a deep fryer or pan and heat. Fry the plantains on both sides until golden brown. Then remove the plantains from the oil and place them on a paper towel to drain.

Now fry the previously prepared sea bass pieces on all sides. Remove and drain on a paper towel. Arrange the cooked plantains and fish on a plate with mayonnaise, Magic Sauce , Pimento Sauce , or any other sauce of your choice.

- Set up the plantains and fish, and you're done!
