I posted a peanut sauce recipe here a few months ago at the request of a friend of mine who is vegetarian. Back then, it was a vegetarian version with mushrooms. She was absolutely delighted with it and tried the recipe immediately, and she loved it.

Traditionally, peanut sauce is prepared without vegetables. At least that's how I know it from home.

I have to admit that I loved peanut butter as a child, but I always felt sick after eating it. It wasn't until a few years ago that I was diagnosed with a peanut allergy, and I was so devastated. Me, a West African with a peanut allergy? Unbelievable!

I discovered through experimentation that I can tolerate peanuts better if I cook them for a very long time. Of course, in moderation.

Now I'll share with you how I prepare my peanut sauce with beef and carrots.

The ingredients


4 tbsp peanut butter,
800g beef,
4 tbsp peanut oil,
6 garlic cloves
, 2 onions
, 3 medium fresh tomatoes
5 carrots
, 1 fresh chili pepper (optional),
1 tsp ground pepper (black & white)
2 tbsp Magic Sauce
, 1 spring onion
, 1/2 leek,
approx. 600ml water,
salt

Cut the meat into pieces as desired, place in a pot with salt, pepper, 1 tbsp Magic Sauce and a coarsely chopped onionn

Peanut sauce
  1. Add all the water and cook until the meat is tender
  2. In the meantime, peel the carrots and cut them into pieces about 2-3 cm in size
  3.  Finely chop the spring onion and chili and set aside together
  4. Clean and finely chop the leeks and tomatoes as well
  5. Peel and finely chop 1 onion and the garlic cloves
  6. Remove the cooked meat from the cooking broth 
  7. Dissolve the peanut butter in some of the still hot meat broth

Mafé | Peanut sauce with beef

Cook 45 minutes

Traditionally, peanut sauce is made without vegetables. At least, that's how I know it from home. But I think vegetables add a bit of color. After all, we eat with our eyes.

Ingredients

  • 4 tbsp peanut butter
  • 800g beef without bone)
  • 6 toes of garlic
  • 2 onions
  • 3 medium tomatoes
  • 5 medium carrots
  • 1 fresh chili pepper
  • 1 tsp ground black & white pepper
  • 2 tbsp Magic Sauce
  • 1 spring onion
  • 1/2 Leek
  • approx. 600 ml water
  • Salt

Instructions 

  • Cut the meat into pieces as desired, place in a pot with salt, pepper, 1 tbsp Magic Sauce and a coarsely chopped onion
  • Add all the water and cook until the meat is tender
  • In the meantime, peel the carrots and cut them into pieces about 2-3 cm in size
  • Finely chop the spring onion and chili and set aside together
  • Clean and finely chop the leeks and tomatoes as well
  • Peel and finely chop 1 onion and the garlic cloves
  • Remove the cooked meat from the cooking broth 
  • Dissolve the peanut butter in some of the still hot meat broth
  • Briefly heat peanut oil in a pot, then briefly sauté the onions and garlic
  • Add the meat and carrots and sauté for about 5 minutes
  • Then mix in the finely chopped leeks and tomatoes and cook for about 5 minutes, until the tomatoes have reduced in volume
  • Now pour in the meat broth and then the dissolved peanut butter
  • Mix everything well, cover, and simmer over medium heat for about 20 minutes
  • Stir occasionally and add more water if needed
  • Now add 1 tablespoon of Magic Sauce, the finely chopped chili, and the leek, stir well, and simmer for another 10 minutes. Season to taste and it's ready
