Ndomba is a dish originating from the Beti people in southern Cameroon. It is a meat or fish dish steamed in banana leaves with various spices and herbs. It is a very healthy dish because steaming in closed leaves preserves all the aromas and nutrients.
Macabo leaves can be used instead of banana leaves. If, like me, you don't have banana or macabre leaves on hand, you can substitute baking paper.
How does that work? I'd be happy to share with you. So, off to the south... Cameroon!
Have fun cooking!
