Ndomba | Tilapia and chicken drumsticks cooked in foil

Ndomba is a dish originating from the Béti people in southern Cameroon

Ingredients

  •  medium-sized tilapia
  • Drumsticks
  • tomatoes
  • 1/3 each of green, red and yellow bell peppers
  • Onion
  • garlic cloves
  •  Basil leaves
  • paprika
  • Herbes de Provence
  • bay leaves
  • Ingwerblätter - Frisch/getrocknet
  • pepper
  • Magic Sauce
  • Cooking oil
  • Salt

Instructions 

  • Clean the tilapia, cut it into 3-4 pieces and pat dry
  • Clean the drumsticks by soaking them in vinegar water for about 10 minutes, then cleaning them thoroughly and letting them drain.
  • Chop tomatoes, peppers, onions, and garlic
  • Pluck the basil leaves and chop them finely
  • Place the tilapia in a bowl, season with salt, and add half of each of: chopped vegetables and basil, pepper, paprika, Herbes de Provence, and Magic Sauce
  • Add a splash of cooking oil, mix well, season to taste and let stand for about 15 minutes
  • Repeat the entire procedure with the drumsticks during that time
  • Then cover a bowl first with aluminum foil, then with baking paper 
  • Add the tilapia and vegetable mixture, add 2 bay leaves and a ginger leaf, and carefully tie it up (leaving some air space)
  • Repeat the same procedure with the drumsticks
  • Place a plate or small pot lid on the bottom of the pot, cover with water, and bring to a boil. Alternatively, use a steamer 
  • Place the tied ndomba in the pot and cook for about 40 minutes. Add more water if needed 
  • Then remove the Ndomba from the pot, cut off the strings and enjoy with a side dish of your choice
