Cameroonian and West African cuisine reinterpreted

Coconuts are found almost everywhere in Cameroon and in many West African countries. They are indispensable both as food and in cosmetics. The scent of coconut reminds many Europeans of summer, sun, beach, and holidays. It reminds me of delicious coconut balls from my childhood.

I loved them as a child. Until a friend of mine found out the recipe, I used Raffaello (shameless plug alert!) as a substitute.

Now I make them myself and I'm thrilled every time.

Ingredients


200g fresh peeled coconut

100g sugar

100ml water

A few drops of lemon or other flavoring (optional)


preparation


  • Finely grate the coconut using a grater
  • Put the water in a pot and bring it to a boil
  • Add the sugar and continue cooking until the water thickens

  • Add the shredded coconut and flavorings and continue stirring until it becomes a golden mass
  • Remove from the heat and let cool briefly
  • Then don't form them into balls. Done

The little balls taste wonderful with coffee or as an accompaniment to various desserts
