Chicken – or, as we affectionately call it in Cameroon, the “most popular vegetable” – is a true all-rounder in the kitchen. Whether grilled, fried, baked, or even as a quick, improvised chicken sandwich – chicken is always a perfect fit! It's a culinary chameleon that should never be underestimated.

Baked chicken, my personal favorite, goes perfectly with so many sides like plantains, bobolo, rice, fresh salad, or simply on its own for those particularly lazy days when all you need is chicken and good company. And for those who like a little more spice, here's a recipe that will test every taste bud: chicken baked in a delicious magic sauce and seasoned with typical Cameroonian flavors like bêpê , essèssè , djangsand, and rondelles – a combination that's not only delicious but also tantalizing to the nose!

The best part? It's super quick to prepare and guaranteed to be a hit. Ideal for anyone who wants to bring a little bit of Cameroon to their plate without spending hours in the kitchen.

Poulet au four – Baked chicken

Chicken is one of the most popular " vegetables " among Cameroonians????

Ingredients

  • 4 fresh chicken pieces (e.g. from thighs)
  • 4 tbsp marinade (e.g. Magic Sauce )
  • Some rapeseed or sunflower oil
  • Salt

Instructions 

Prepare the chicken thighs:

  • Rinse the chicken thighs thoroughly and pat dry with kitchen paper.
  • Make incisions in the meat so the marinade can penetrate well. Rub in a little salt to enhance the flavor.

Marinate:

  • Place the chicken thighs in a bowl and generously coat with 4 tablespoons of marinade ( Magic Sauce ).
  • Distribute the marinade evenly over the meat and let the thighs marinate in the refrigerator for at least 30 minutes, but ideally for 2-3 hours or overnight.

Cook chicken in the oven:

  • Preheat the oven to 200°C (top/bottom heat).
  • Grease a baking tray with a little oil or line it with baking paper.
  • Place the marinated chicken thighs on top and bake in a preheated oven for 35–45 minutes, until the skin is golden brown and crispy. Turn the chicken once halfway through so it browns evenly.

Serve:

  • Remove the cooked chicken thighs from the oven and serve with side dishes such as rice, vegetables or potatoes, as desired.

Notes

My tip for you:
You can also brush the chicken thighs with a little extra oil or butter to make the skin even crispier. Enjoy!
Reserve some of the marinade and serve it with the meat later.
For those who like spicy food, add a dollop of sauce .
