After a long absence, I'm back today with a delicious recipe for all bean lovers. I was inspired by my collaboration with Saveurs d'Afrik, who regularly supply me with tasty ingredients. Red beans, as well as white beans, are often served in Cameroonian dishes because they are healthy and very filling. Therefore, they offer a nutritious and delicious meal, especially for vegans.
Since it's been quite hot the last few days, we often skipped a hot meal, so I decided on a bean salad, which everyone really enjoyed. It certainly didn't take long before it was all gone.
This bean salad requires very few ingredients and is quick to prepare. Why not give it a try?.

White Bean Salad | White Bean Salad
Ingredients
- 500g dried white beans or canned beans
- approximately 200g mini Roma or cherry tomatoes
- approx. 50 g gherkins
- 3 Bell peppers (green/red/yellow)
- 2 carrots
- 4 tablespoons salad oil
- 2 tbsp mustard
- 1 red onion
- 1 lime
- 1-2 sprigs of spring onion
- salt and pepper
Instructions
- Cook the beans once in a pressure cooker using steam, then release the steam normally (without removing the lid). Afterward, continue cooking the beans normally (without steam) for about 20 minutes, until they are tender but still have a little bite.Then drain the beans, rinse with cold water and let them cool
- Meanwhile, peel the carrots, cut them into cubes, put them in a pot with a little salt or broth, cover with water and bring to a boil
- Clean the bell peppers and dice them, add them to the now-boiling carrots, and cook for about 2 more minutes. Then rinse with cold water, drain, and set aside
- Chop the tomatoes, cucumbers, onions and spring onions as well and set them aside
- In a small bowl, combine mustard, oil, lime juice, salt and pepper and mix well to make a nice vinaigrette
- Now, in a large bowl, add the beans, carrots, bell peppers, tomatoes, cucumbers, onions, spring onions, and vinaigrette one after the other, and gently mix well. Let it sit for about 10 minutes and serve cold
Notes
I like to serve this salad as a main meal on hot days; it's simply delicious and filling.
