Cameroonian and West African cuisine reinterpreted

Peanuts are very popular in West African cuisine and are used in many variations. Whether in Ndolè or Suyamix/Kankan, as oil or in baked goods, etc…

Perhaps the best-known way to prepare peanuts is peanut sauce, also known as Mafé in some regions of West Africa.

Peanut sauce is often prepared with a lot of meat or fish. Sometimes it also includes added vegetables such as carrots, peas, or eggplant.

Today I'm sharing a vegetarian version where I replace the meat/fish with mushrooms. Since peanuts are naturally very tasty, the sauce tastes just as delicious with or without meat/fish.


Ingredients:


  • 3 tbsp peanut butter
  • 4 tablespoons peanut oil
  • 300g mushrooms
  • 2 cloves of garlic
  • 1 onion
  • 100g cherry tomatoes
  • 1 tsp pepper (black and white)
  • 1 tbsp tomato paste
  • Approximately 300 ml of water
  • 1 tbsp Magic Sauce (spicy)
  • 1 spring onion
  • 1 allspice/pepperoni
  • Salt

Preparation:


  1. Chop the onions and fry them in peanut oil for about 1 minute
  2. Add the mushrooms and sauté for another 2 minutes
  3. Add garlic, either pressed or finely chopped, and sauté for 2 minutes
  4. Add finely chopped cherry tomatoes and sauté for about 5 minutes, stirring regularly
  5. Add pepper and tomato paste and sauté for another 2 minutes, stirring regularly
  6. Add water, cover the pot and bring to a boil
  7. Add peanut butter and stir until dissolved in the water. Add more water if needed
  8. Add Magic Sauce and allspice/pepperoni, cover the pot and simmer for about 20 minutes, stirring occasionally.
  9. Add the chives and remove the pot from the heat. Done!

  • 2 garlic cloves
  • 1 Onion
  • 100g cherry tomatoes
  • 1 tsp pepper (black and white)
  • 1 tbsp tomato paste
  • 300 ml water (or more as needed)
  • 1 tbsp Magic Sauce (spicy)
  • 1 spring onion
  • 1 Scott bonnet or chili pepper
  • Salt
