What exactly is Pak Choi?

Today I'm taking another short detour into Asian cuisine.

Pak choi , also known as Chinese mustard greens or leafy cabbage, is an Asian vegetable with tender green leaves and crisp white stalks. Originally from Asia, it has found its way into German cuisine. Its slightly nutty flavor is reminiscent of Swiss chard. Pak choi can be stir-fried, grilled, steamed, blanched, or eaten raw. It adds an Asian touch to stir-fried vegetables and pairs well with coconut milk in curries. With only about 12 calories per 100 grams, pak choi is low in calories and rich in calcium and vitamins. It's definitely a great addition to many stir-fries.

Pak choi vegetable stir-fry with halibut

Prep time 10 minutes
Cook time 20 minutes
Total 30 minutes
Servings 4

Ingredients

  • Approx. 500g Pak Choi
  • approx. 200 g brown mushrooms
  • yellow and one red bell pepper each
  • Approximately 500g of fresh broccoli
  • 1 large onion
  • 2-3 garlic cloves
  • 1 grated small piece of ginger
  • 1-2 tsp potato flour
  • Approximately 2 tablespoons of sesame oil
  • Approximately 4 tablespoons of rapeseed oil
  • 2-3 tablespoons soy sauce
  • Salt

Fish

  • 1/2 Halibut fillet
  • 1/2 tsp pepper (black & white)
  • 1/2 tsp fish seasoning
  • 1/2 tsp Magic Sauce
  • 1 tbsp rapeseed oil

Instructions 

  •  First, cut the pak choi into strips, then wash and drain.
    Then cut all the other vegetables, such as bell peppers, zucchini, and carrots, into thin strips, cut the broccoli into florets, and halve the mushrooms.
  • In a wok, add sesame oil and rapeseed oil, then add the finely chopped onions, garlic, salt, mushrooms, soy sauce and grated ginger, mix well and stir-fry for about 2 minutes
  • Now add the sliced ​​bell peppers, the broccoli florets, and the bok choy, and mix well. Cover and simmer for about 5 minutes.
  • Meanwhile, mix 1-2 teaspoons of potato starch with about half a cup of cold water and add to the sauce to thicken it. Stir well and simmer for about one minute.

fry halibut

  • Wash the halibut in cold lemon water and pat dry thoroughly with kitchen paper. Then grind fresh black and white pepper in a mortar and pestle and mix in a bowl with salt, rapeseed oil, a little Magic Sauce, and fish seasoning to make a delicious marinade. Rub the fish all over with this marinade.
  • Then fry in a pan with a little rapeseed oil on both sides until cooked through.
    Then serve together with the pak choi vegetable stir-fry and rice as a side dish and enjoy hot!
