Grilling season has been in full swing for ages, so it's high time for some kebabs. What could be better than suya?

For those unfamiliar with this delicious dish: Suya is among the most popular street foods in West Africa. The secret to Suya lies primarily in the composition of its spice blend, Kankan .

Kankan is now widely available. Even here in Germany, it can be found in many African grocery stores or online shops. But if you prefer, you can of course make your own kankan. Recipes for that are already available here on the blog.

Almost any type of meat can be used for suya skewers. I often use tender beef fillets or minute steaks, which cook quickly. This time, I opted for tender chicken breast fillets. Besides the correct kankan ( the quality of the meat and the cooking time.

Traditionally, suya skewers are grilled over charcoal. However, if you prefer, you can grill them like I do on an electric or gas grill, or even in the oven with the grill function. They taste delicious in any case.

Suya Poulet | Chicken Suya Skewers

Prep time 10 minutes
Cook time 20 minutes
Total 30 minutes

Equipment

  • bamboo or wooden skewers
  • plastic bag

Ingredients

  • 800g chicken breast fillets
  • 4 tbsp Kankan/Suya spice mix
  • 1 a little salt
  • a little cooking oil

Instructions 

  • Rinse the chicken fillets thoroughly with cold water and pat dry with paper towels. Then cut them into longer pieces so they can be skewered more easily
  • Drizzle the pieces with a little oil and salt, mix well, and then skewer them with wooden or bamboo skewers
  • Place the kankan in a plastic bag, add the skewers, and shake well so that the spices are evenly distributed over all the meat
  • Place on a hot grill (charcoal, gas, or electric grill), brush with a little oil and grill for about 15 minutes on all sides until the meat is cooked through.
  • Serve with your choice of side dish and enjoy hot!
