Suya is a very popular street food in West Africa. The secret of suya is its typically spicy, nutty, and very tasty spice blend, the kankan.

Kankan gets its nutty flavor from its main ingredient, peanuts, specifically roasted peanuts.

Every suya I ate during my childhood in Cameroon or during my stays back home had its own unique flavor; they were all different, but all incredibly delicious. This is due to the spice blend of each suya master.

For years I brought my spice mix from home to Germany, until I came across a recipe for a really successful mix and I would like to share it with you.

Ingredients


6 tbsp roasted peanuts,
1 tsp cayenne pepper (or more for those who like it spicy),
1 tsp paprika powder,
1 tsp onion powder,
1 tsp garlic
1 tbsp ginger powder,
1 tsp salt

Place all ingredients in a mortar or a dry mixer/coffee grinder and grind into a powder.

  • 6 tablespoons roasted peanuts
  • 1/2 tsp cayenne pepper (or more for those who like it spicy)
  • 1 tsp paprika powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp ginger powder
  • 1 tsp salt

Instructions 

  • Place all ingredients in a mortar or a dry mixer/coffee grinder and grind into a powder.

Notes

My tip for you:
You can make a larger batch of the spice mix, freeze it in small portions, and have it on hand whenever you need it. It also goes wonderfully with other meat dishes.
As an alternative to peanuts, you can use cashew nuts.
