Koki - Kamerunischer Schwarzaugenbohnen Kuchen

Koki is a very popular Cameroonian dish made from black-eyed peas and palm oil from the western region

Equipment

  • pressure cooker
  • aluminum foil
  • baking paper

Ingredients

  •  peeled black-eyed peas
  • Palm oil
  •  Magic Sauce   (or 1 Maggi cube)
  • fresh chili pepper (to taste)
  •  Water
  • Salt

Instructions 

  •  Die Bohnen in einer großen Schüssel waschen, dann viel Wasser dazu geben und ca. 20 - 30 Minuten einweichen lassen

  •  Then, repeatedly separate the skin from the beans by pouring out the water with the skin and adding new water until no skin remains
  • Place the beans in a blender with the chili pepper, Magic Sauce and something lukewarm, and blend into a dough 
  • Place in a bowl, mix well with salt and palm oil until the dough has a homogeneous deep orange color
  • Add a little lukewarm water if necessary (should the dough be too thick)
  • Cover the bottom of a large pot, either with a smaller pot lid or with a plate, so that the koki does not directly touch the bottom of the pot later.
  • Add water and bring to a boil
  • In the meantime, prepare a bowl, first with aluminum foil, then with baking foil
  • Place one-third of the koki dough into the baking foil and seal with a rubber band, then protect the whole thing with aluminum foil
  • Place in a pot with boiling water, cover, and cook for about 1 hour, adding more water occasionally. 
  • After 1 hour, remove the koki from the foil, cut it into pieces and arrange it. Done
