Tomatoes. I simply can't imagine cooking permanently without them. While tomatoes aren't used in every dish, they're essential in many of my favorites. Let's start with sauces: Is it even conceivable to make peanut sauce or peperoncini soup without tomatoes? It's probably possible, but would they actually taste good? Let's move on to stews like Jollof Rice. Tomatoes are absolutely indispensable in this dish. It practically lives and breathes tomatoes, just like many other dishes. Tomatoes give them that special umami flavor that tantalizes the taste buds.
I've certainly made it abundantly clear that tomato sauce holds a very high place on my list of favorite dishes. Furthermore, when we were little, tomato sauce was always something truly special. Especially when it was prepared with meat and then served with pasta or rice, it was always a special occasion for us.

Some people claim that tomato sauce is boring. My answer to that is simple: "That's not the case with my tomato sauce, the way I prepare it!".
My tomato sauce is always a culinary delight. Of course, as with any dish, it all comes down to choosing the right ingredients. Whether you use fresh, sun-ripened tomatoes or canned tomatoes is entirely up to you. The quality, however, must be good to create the full flavor. After trying this tomato sauce recipe, hardly anyone will ever call tomato sauce boring again. Why not give it a try?

Chicken in Spicy Tomato Sauce | Chicken in Spicy Tomato Sauce
Ingredients
- approx. 1.3 kg whole fresh chicken
- 500 fresh tomatoes ()
- 1 can of canned tomatoes
- 2 tbsp tomato paste
- 1 green bell pepper
- 1 red bell pepper
- 1 yellow bell pepper
- 1 Onion
- 1/2 tsp garlic paste or 3-4 cloves
- 1/2 lemon
- 2 sprigs of coriander
- 2 sprigs of spring onions
- 1-2 tbsp Magic Sauce Carrots
- approx. 100 ml cooking oil
- approx. 500 ml frying oil
- Salt
Instructions
- First, cut the chicken into pieces, clean it thoroughly with plenty of lukewarm water and let it drain well
- Place the chicken pieces in a pot and sprinkle with the juice of half a lemon. the Magic Sauce Carrots and salt, mix well, cover, and set aside.
- In the meantime, wash, peel, and dice the carrots. Wash the fresh tomatoes and dice them into larger cubes as well
- Wash the bell pepper, remove the seeds, cut into large pieces and chop in a food processor
- Chop the spring onions, onions and coriander into small pieces as well
- Then cook the pot with the chicken on the stove for about 10 minutes, and then deep-fry the pieces in frying oil until golden brown on all sides. Alternatively : The chicken pieces can be baked in the oven instead of frying them.
- Meanwhile, heat cooking oil in a pot, add onions, salt, garlic paste and carrots and sauté for about 2 minutes, then add the tomato paste, mix well and sauté for another 2 minutes.
- Meanwhile, don't forget to put the chicken pieces in the frying oil and turn them over as needed
- Add the freshly chopped tomatoes and the canned tomatoes and sauté for about 10 minutes, stirring occasionally. Then add the chopped bell peppers and cook, covered, for about 5 minutes over medium heat
- Remove the cooked chicken from the frying oil, add it to the sauce along with any chicken juices from the cooking process, mix carefully, cover, and simmer over medium heat for about 5 minutes
- Add the finely chopped coriander sprigs and some of the spring onions, mix carefully and simmer covered for another 5 minutes.
- Serve with your choice of side dishes, sprinkle with the remaining spring onions, and enjoy hot
