Hello from my holiday in beautiful Switzerland. Even on vacation, I can't help but think about food. Especially during holidays, food is even more important to me. You're often out and about, which offers the opportunity to discover new dishes and eating habits. I love to be inspired by that. This was certainly the case with today's recipe from Moroccan cuisine.


Today's recipe also features preserved lemons. As I mentioned in my previous post, this practical lemon recipe from Morocco adds a light lemon note to any dish without making it too sour.

This time I used the preserved lemon to enhance my beloved oven-baked chicken.

Chicken thighs on zucchini with Moroccan preserved lemons

Prep time 15 minutes
Cook 45 minutes
Total 1 hour

Ingredients

  • 3-4 Chicken thighs
  • 1-3 zucchini
  • 2-3 tablespoons olive oil
  • 1 Onion
  • 2 tbsp Magic Sauce
  • 1 tbsp preserved lemon syrup
  • 1 Salted lemon
  • Salt

Instructions 

  • Wash the chicken thighs thoroughly and pat dry with kitchen paper. Then make deep cuts on both sides into the meat and place in a bowl
  • Cut the onions lengthwise and add them to the bowl with the chicken thighs
  • Add a tablespoon of the preserved lemon syrup, magic sauce, salt and olive oil, mix everything well and set aside
  • Now slice the zucchini into even rounds and mix them in a baking dish with salt, olive oil, and a little Magic Sauce. Arrange the zucchini rounds side by side in the baking dish
  • Place the marinated chicken thighs on the zucchini slices, sprinkle with the onions, and finally finely chop a preserved lemon and place it on top.
  • Now grill the chicken thighs on both sides in a preheated oven for about 45 minutes, first using the convection setting and then the grill setting. Serve with your choice of side dish and enjoy!

Notes

I recommend serving it with couscous or rice
