Cameroonian and West African cuisine reinterpreted

It's been quite some time since my last post, as I've been primarily focused on one thing for the past few months: my first cookbook, which I announced publicly just before Christmas. It's been available since mid-January and can be ordered through my shop . While this fulfills one of my many big dreams, it also means I haven't really felt inspired to share new recipes with you here on my blog since then. I was even worried my muse had deserted me. So, I apologize for keeping you waiting so long!

After all these months of absence, I was looking for the ideal recipe for my comeback. It had to be something really special, something I'd never shared with you on my blog before…

A few weeks ago, one of my colleagues celebrated his birthday. As is customary at our workplace, he brought two homemade cakes to the office. One of them immediately caught my eye, and of course, I tried it first. Wow, it was delicious! When I asked him what it was, he said it was an orange-almond cake, baked without flour. His explanation really piqued my interest in this tasty treat. Before I could think about it any further, I immediately asked him for the recipe, even though I never usually do that with cakes. While I enjoy cooking, I'm not much of a baker.

He promptly sent me the recipe directly via WhatsApp. And indeed, I immediately noticed that no flour was used, apart from sprinkling the baking pan with flour. "Without flour, not much can go wrong, right?" I thought to myself, but hesitated for the time being.

Several weeks passed before I finally decided to attempt my first baking project in over four years. The long gap between my last two baking attempts has its own story, which I might tell you about sometime. After cooking the oranges for almost two hours, the rest went incredibly smoothly. Naturally, I eagerly awaited the result and could hardly believe it when the cake had cooled completely and was ready to eat. The appearance, texture, and taste were simply perfect, something I initially found hard to believe. One thing is for sure: this definitely won't be the last time I bake this cake.

Orange and almond cake without flour

Time 2 hours
Cook Time 1 hour minutes
Servings 10

Ingredients

  • 2 large organic oranges
  • 6 eggs
  • 300 g ground almonds
  • 250 g sugar
  • 1 tsp baking powder

For the baking pan

  • approx. 1 tbsp butter
  • approx. 1 tbsp flour

Instructions 

  • Wash the oranges well and place them unpeeled in a pot, cover with water and cook slowly for about 2 hours at a low heat.
  • Then remove the oranges from the pot and let them cool. Next, cut them open and remove any seeds. Then, purée the oranges with the peel in a blender, or peel them first and use only the pulp (I opted for the latter)
  • Then grease a baking tin with butter and sprinkle with flour and set aside.
  • Then, in a large bowl, add the almonds, sugar, and baking powder and mix well, then add the eggs one at a time and mix well with a hand mixer.
  • Pour the batter into the baking tin and bake in a preheated oven on the middle rack for about 70 minutes.
  • Then let it cool and serve

Notes

If you like, you can serve it with whipped cream.
