Orange and almond cake without flour

Ingredients

  • 2 large organic oranges
  • 6 eggs
  • 300 g ground almonds
  • 250 g sugar
  • 1 tsp baking powder

For the baking pan

  • approx. 1 tbsp butter
  • approx. 1 tbsp flour

Instructions 

  • Wash the oranges well and place them unpeeled in a pot, cover with water and cook slowly for about 2 hours at a low heat.
  • Then remove the oranges from the pot and let them cool. Next, cut them open and remove any seeds. Then, purée the oranges with the peel in a blender, or peel them first and use only the pulp (I opted for the latter)
  • Then grease a baking tin with butter and sprinkle with flour and set aside.
  • Then, in a large bowl, add the almonds, sugar, and baking powder and mix well, then add the eggs one at a time and mix well with a hand mixer.
  • Pour the batter into the baking tin and bake in a preheated oven on the middle rack for about 70 minutes.
  • Then let it cool and serve

Notes

If you like, you can serve it with whipped cream.
