Cameroonian and West African cuisine reinterpreted

During my childhood, I rarely had the opportunity to eat potatoes, as they were quite expensive in Cameroon at that time. This was because potatoes were only grown in a few regions of my homeland, and that affected the price.

Therefore, potato dishes were something special for me, as for all other children. So I was all the more surprised when I came to Germany many years ago and found potatoes in all variations and price ranges offered in supermarkets. During my first few months here in my new adopted home, potatoes were served very often, until at some point I simply couldn't stand the sight of them anymore.

I've rediscovered my love for potatoes, especially as fries, but also in stews with tomato sauce and meat, just like in my childhood. This dish always symbolized comfort and security for me back then.

Today's recipe comes from my mother. However, I've adapted it slightly. Instead of beef, I opted for smoked chicken, which gave the stew a subtle smoky flavor and tastes absolutely delicious. Try it yourself!

Sautéed potatoes with smoked chicken | Potato stew with smoked chicken

Ingredients

  • 300 kg of potatoes, predominantly firm-cooking
  • 1/2 smoked chicken
  • 400g diced tomatoes
  • 1 tbsp tomato paste (optional)
  • 3 carrots
  • 1/3 each of green, red and yellow bell peppers
  • approx. 4 tbsp red palm oil
  • 2 spring onions
  • 1 tbsp Magic Sauce Carrots
  • Salt

Instructions 

  • Peel the potatoes, cut them into wedges, then sprinkle them with plenty of salt and leave them in a sieve to drain
  • In the meantime, peel the garlic and onions, and finely chop the onions.
    Peel the carrots, cut them into large pieces, and set them aside. Cut the bell peppers into pieces as well and roughly chop them in a food processor
  • Wash the smoked chicken and cut it into pieces
  • Now rinse the potatoes thoroughly under running water to remove all the salt and let them drain
  • Then, in a pot, briefly heat the palm oil, add the onion, pressed garlic, tomato paste and salt, mix well and sauté for about one minute.
  • Now add the chopped bell peppers, diced tomatoes, carrots, potatoes, and Magic Sauce Carrots , stir well, cover, and simmer over medium heat for about 20 minutes. Stir occasionally.
  • Then add the smoked chicken, mix well and simmer for another 10 minutes. Season to taste and enjoy!
