The summer has been quite hot these past few days, and although I don't know why, this humid weather has constantly reminded me of sun-ripened tomatoes. That's probably one of the reasons why I often preserve tomatoes in the summer. After making numerous jars of tomato sauce again this year, and still having plenty of tomatoes left over, I suddenly remembered this simple dish from my tribe ( Bamun ).
this recipe for pumpkin leaf sauce ( chuem ) here. It's one of the most popular sauces among the Bamun people, served with couscous. Traditionally, chuem is vegetarian, even vegan, as it contains no animal products. However, it's very often served with a very spicy tomato sauce, which may contain meat or fish.
This tomato sauce is very quick and easy to prepare, requiring no fuss whatsoever. It can be served chuem or njapche

Very often, this sauce is made with either dried/smoked fish or beef, as these are the most common animal products available on the market. This time, however, I opted for fresh lamb goulash. These cuts of meat are particularly well-suited for those who don't like an overly strong lamb flavor. The result is a slightly thickened and flavorful sauce that simply goes with everything.
Definitely a recipe for tomato sauce lovers and for those new to lamb. Why not try it yourself?

Sûp Chuem | Tomato sauce accompaniment to the chuem
Ingredients
- 600g Ready -to-cook Lamb Goulash
- 400g tomatoes
- 2 onions
- 1/2 tsp garlic paste
- 1 tbsp Magic Sauce (or your own spice mix)
- approx. 50 ml cooking oil
- Salt
Instructions
- Wash the meat, drain well and set aside
- Heat oil in a pot and add the finely chopped onions, garlic paste and salt, and sauté until the onions are translucent
- Then add the meat and Magic Sauce, mix well and fry partially covered for about 5 minutes
- Add the tomatoes and sauté for about 10 minutes, stirring regularly, until the tomatoes start to stick slightly to the bottom of the pot
- Add a little water and simmer for another 5 minutes, until the meat is tender
- Remove from the oven, serve with your choice of side dish and enjoy
