Express Jollof Rice & Plantains Fries| Express Jollof rice with plantains fries

Ingredients

  • 200g rice
  • 2 carrots
  • 2 onions
  • 400g diced tomatoes (fresh or canned)
  • 3 tbsp tomato paste
  • 1 tbsp paprika paste (or 1 tsp paprika powder)
  • 1 spring onion
  • 1 tbsp Magic Sauce
  • 1 tsp garlic paste (or 4 cloves of garlic)
  • 1 tbsp Jollof spice mix
  • 50 ml sunflower oil
  • 1 tsp chez Fadi's Hot&spicy Sauce (optional)

For the Plantains Fries

  • 2 yellow plantains
  • some frying oil

Instructions 

  • Wash the rice thoroughly and cook it in a rice cooker with a little oil, salt, Jollof spice mix and 1 tbsp tomato paste
  • Meanwhile, peel the carrots and onions and dice them into small cubes
  • Heat the oil in a pot, add the onions, garlic paste, Jollof spice mix and salt, stir well and sauté for about 2 minutes
  • Then add the paprika paste, 2 tablespoons of tomato paste, the chopped canned tomatoes, the diced carrots, and the Magic Sauce. Mix everything well and simmer, covered, for about 15 minutes over medium heat
  • Then add the cooked rice, mix well, add another generous tablespoon of Jollof spice mix and about a glass of water, mix well again, cover, and simmer for about 5 minutes on very low heat

Plantains Fries

  • Meanwhile, peel the plantains and cut them into small pieces. Heat a pan with frying oil and fry the plantains until golden brown.
  • Remove the cooked plantains from the oil and let them drain on a paper towel
  • Serve the cooked Jollof Rice in a bowl alongside the cooked Plantain Fries and enjoy hot

Notes
